We combined our two passions: wine and horses to create a project called D.S. bio. Haflinger and Pony di Esperia horses (an endangered breed) are raised on the farm, and the grape varieties grown are indigenous to the Comino Valley and Media Valle del Liri (Maturano and Pampanaro as whites; Lecinaro and uva giulia as reds).
Most of the work in the vineyards is done manually, or with the help of horses;
This is to limit mechanization as much as possible. The same goes for winemaking: wines ferment and age in concrete tanks, racking is done by gravity without the use of pumps (strictly following the phases of the moon). The farm is certified organic and biodynamic.
